NUTRIENT PACKED Dinner Delights
KALE & BROWN RICE SALAD
Kale
Apples
Pine nuts
Cucumbers
Cilantro
Brown Rice (cooked)
Extra Virgin Olive Oil
Lemon
Sea salt (if desired)
Herbs (as desired)
Directions:
- Combine above ingredients in bowl, mix.
- Enjoy!
COOL DOWN CUCUMBER DRINK!
Coconut water
Cucumber
Cilantro
Aloe vera juice
Mint leaf
Directions:
- Blend in blender and enjoy!
WATERMELON COOL DOWN NOW!
Watermelon
Mint leaf
Directions:
- Cut up watermelon
- Cut up mint leaf
- Put mint leaf on watermelon
- Enjoy!
COCONUT QUINOA
Quinoa (sprouted is best)
Coconut milk
Your favorite vegetables diced (make sure to include green leafy vegetables in there too. You can cut up or tear into strips)
Shredded coconut (if desired)
Sea Salt (to taste)
Cilantro
Directions:
- Cook quinoa and vegetables in coconut milk (you can add water to coconut milk to make it less dense)
- Once cooked add sea salt and cilantro and then stir.
- Add shredded coconut on top.
- Enjoy!
